In 1987, I got married knowing almost nothing about cooking—let alone baking. But I was

blessed with an Aunt Laura, a woman who could bake like nobody’s business. She lived in Queens, New York, and made the most unforgettable rugelach I had ever tasted. I’m

convinced I could have eaten a hundred in one sitting.

One day, Aunt Laura offered to teach me how to make her rugelach—over the phone. So

there I was in Florida, newly married, apron on, phone tucked between my ear and shoulder, scribbling down every word. With her patience, gentle guidance, and laughter filling the line, I learned how to make truly incredible rugelach. That moment marked the very beginning of my baking journey.

Not long after, I met an older woman who taught me how to make lace cookies—delicate, golden, lacy wonders unlike anything I had ever seen. I was fascinated. They felt so unique, and my mind immediately began imagining how I could make them my own, adding my own twist.

Then life blossomed in the sweetest way. My two sons were born—Blake in 1992 and

Spencer in 1993—the best thing I ever did. Between raising my boys, learning how to cook, and growing into my role as a wife and mum, my days were full of joy. I baked whenever I could, determined to learn one cookie at a time.

Fast forward to 2010. Blake went off to college, and like any devoted mum, I packed him batches of my lace cookies to take with him. He shared them with his friends, and when he came home, he said, “Mum, my friends went crazy over your cookies. They said they would even pay for them.” I laughed. I loved gifting cookies—not selling them. I gave them to teachers, doctors, neighbors—anyone who showed kindness to my boys. Baking was my way of saying thank you.

But Blake didn’t stop nudging me. Every time he came home, he’d say, “Mum, people would buy these.” After college, Blake became an entrepreneur, starting a company with his best friend and eventually selling it. He knew what he wanted to do—and somehow, he knew I needed to do what I needed to do too. He believed I could have a cookie business long before I did.

Then came 2020. The world slowed down, life grew quiet, and I found myself back in the

kitchen baking batch after batch of cookies. And I thought… maybe it’s time. Maybe this is the moment. Maybe it’s time to share these cookies with everybody.

That was the beginning of Bite Me By Lee.

I ordered the labels, sourced the very best ingredients, and carefully chose the packaging—like charming little Chinese boxes—because I wanted every bite to feel like it was wrapped in sweetness. In 2023, I officially launched Bite Me By Lee.

Then came a moment that still brings tears to my eyes. When my website went live, the very

first person to buy my cookies was my son Spencer, who was living in New York. He bought the first box—and he paid for shipping. Knowing he believed in me that much still overwhelms me.

After graduating college, Spencer moved to New York determined to build a life for himself. He started at the very bottom and worked relentlessly, eventually becoming the Director of Operations for a company that sells over a billion dollars a year. I am endlessly proud of him.

Both of my sons encouraged me to turn my baking into a business. And my husband—my

constant believer—stood beside me every step of the way. Between him and the boys, I have been surrounded by love, encouragement, and the strength to make my dream come true.

I used to say “Bite me” with a wink and a laugh. Now it carries a whole new meaning.
